Food at the speed of life: Granola sticks messy but tasty

With Freedom New Mexico sponsoring the Taste of Home Cooking School, I tried a recipe Diane Toomey of Pennsylvania submitted to Taste of Home.

Granola Banana Sticks

• 1/4 cup peanut butter

• 2 Tablespoons plus 1 1/2 teaspoons honey

• 4 1/2 teaspoons brown sugar

• 2 teaspoons milk

• 3 medium firm bananas

• 6 popsicle sticks

• 2 crunchy oat-and-honey granola bars, crushed

In a small saucepan, combine the peanut butter, honey, brown sugar and milk; cook until heated through, stirring occasionally. Peel bananas and cut in half widthwise; insert a popsicle stick into one end of each banana half. Spoon peanut butter mixture over bananas to coat completely. Sprinkle with granola. Serve immediately or place on a waxed paper-lined baking sheet and freeze.

Six servings, 353 calories each

I substituted granola cereal for bars. My attempt to use plastic knives instead of popsicle sticks didn’t work, so I ate the treats with my fingers and a fork. Beware, they’re messy.

Still, the treats are quick and tasty, especially when they’re defrosted the next day.

The cooking school is 5:30 p.m. to 7 p.m. Oct. 14 at the Marshall Auditorium in Clovis.
